Homemade Lemon Jam Cookies
In Germany around Christmas time all the houses will bake an infinite variety of cookies ( called Platzchen ).
So, this a one german recipe I had, which I adapted to make it more healthy and vegetarian using ghee, jaggery and whole wheat flour!!
Ingredients:
250gm Ghee
1 cup of grated/powdered organic jaggery
1 teaspoon of vanilla essence or even better scratch from 1/4 of a fresh vanilla bean
¾ cup of powdered cashew nuts or almonds or any nut you like
2 ½ cups whole wheat flour
½ teaspoon of backing soda
Zest from 2 lemons, this will give a lovely lemony taste (what we need here is only the yellow or green part of the lemon skin, so in the finest part of a grater you will grate only the outside part of the lemon, stop at the white part because it is bitter)
Now to replace the eggs we will use flaxseeds !!! Yes! Flax seeds is the most concentrated source of essential omega 3 acids. You have to buy flaxseeds and grind them, put the powder in a jar and keep it in the fridge.
Take 3 tablespoons of the flax seed powder and mix it with 9 tablespoons of water, let it stand for ten minutes (this will be equal to 3 eggs)
How to do it!!
In a bowl put the ghee , jagerry, lemon zest and the vanilla. Using a electric beater or by hand using a big spoon beat it for 5 minutes until it becomes creamy. Add the flaxseed mixture and beat again. In a separate bowl throughly combine all the dry ingredients. Add to the other mixture and mix it until well blended.
Preheat the oven to 180.
Take a baking tray and sprinkle some flour on it.
Take a full teaspoon of the dough into your hands, form a ball, place it in the tray and flatten it a little. With your index finger make a hole in the middle of the cookies.
Bake the cookies for 12 to 15 minutes or until golden brown.
Remove them from the oven and after five minutes carefully remove the cookies from the tray and let them cool down on a wire rack or a plate.
Take about 6 tablespoons of any jam of your choice . Put it in a small pen and bring it to boil under constant stirring. Let it boil for half a minute.
With a spoon fill in the holes that you made in the cookies right away. After the jam cools down it will get firm.
Now only enjoy it!!!!
